Servings: 4 Prep Time: 10 minutes Cook Time: 25 minutes

Ingredients:

  • 1 egg
  • 40g almond butter
  • 2 tsp maple syrup
  • 1 medium banana, mashed
  • 200g oats
  • 1 tsp baking powder
  • 60g vanilla protein powder
  • 280ml unsweetened almond milk
  • 120g SKYR yoghurt
  • 25g flaked almonds
  • ½ tsp icing sugar

Instructions:

  1. Preheat oven to 180°C (350°F)
  2. Create almond filling by whisking together egg, almond butter, and maple syrup
  3. In a large bowl, combine mashed banana, oats, baking powder, and vanilla protein powder
  4. Mix in SKYR yoghurt and almond milk until well combined
  5. Pour two-thirds of the oat mixture into a greased baking dish
  6. Add almond filling layer
  7. Top with remaining oat mixture and sprinkle with flaked almonds
  8. Bake for 20-25 minutes
  9. Dust with icing sugar after removing from oven

Storage Tip: Store in refrigerator for up to 4 days. Reheat individual portions in microwave for 30 seconds.
