For the Salad Base:
- 1 x 400g tin butterbeans, drained
- 2 large handfuls romaine lettuce, sliced
- ½ cucumber, deseeded and diced
- 1 spring onion, finely sliced
- 1 tbsp mixed seeds, for serving

For the Green Goddess Dressing:
- 150g 2% fat Greek yoghurt/SKYR
- 1 tsp olive oil
- ½ lemon, juiced
- 30g baby spinach
- 1 tbsp apple cider vinegar
- ½ avocado
- 6 basil leaves
- 2 tbsp fresh coriander
- 1 garlic clove
- 2 tbsp chives
- 150ml water

Instructions:
- Combine butterbeans, lettuce, cucumber, spring onion, and seeds in a large bowl
- Blend all dressing ingredients until smooth, adjusting water for desired consistency
- Pour dressing over salad and mix well
