  • 1 x 400g tin butterbeans, drained
  • 2 large handfuls romaine lettuce, sliced
  • ½ cucumber, deseeded and diced
  • 1 spring onion, finely sliced
  • 1 tbsp mixed seeds, for serving

For the Green Goddess Dressing:

  • 150g 2% fat Greek yoghurt/SKYR
  • 1 tsp olive oil
  • ½ lemon, juiced
  • 30g baby spinach
  • 1 tbsp apple cider vinegar
  • ½ avocado
  • 6 basil leaves
  • 2 tbsp fresh coriander
  • 1 garlic clove
  • 2 tbsp chives
  • 150ml water

Instructions:

  1. Combine butterbeans, lettuce, cucumber, spring onion, and seeds in a large bowl
  2. Blend all dressing ingredients until smooth, adjusting water for desired consistency
