Easy Slow Cooker Pulled Carnitas

Make tender, flavorful pulled pork carnitas in your slow cooker with this simple recipe. Perfect for tacos, burritos, or rice bowls.
Ingredients:
- 4-6 lb boneless pork shoulder (Boston butt), trimmed and chunked
- 2 tbsp olive oil
- 3 cups broth (chicken or vegetable) or 1 bottle beer
Raw pork shoulder with seasonings
Spice Rub:
- 1/2 cup brown sugar
- 1/4 cup ground cumin
- 1/4 cup paprika or chili powder
- 2 tbsp salt
- 1 tbsp black pepper
- 1 tbsp adobo seasoning or granulated garlic
- 1 tbsp onion powder
- 1 tbsp ground mustard
- 1 tbsp dried oregano
- 1/2 tsp sweet paprika
- 1/2 tsp ground cinnamon
Spices for pulled pork rub
Instructions:
- Trim excess fat from pork and cut into large chunks
- Coat pork pieces generously with spice rub
Seasoned raw pork shoulder
- Heat olive oil in pan over medium-high heat
- Sear pork chunks 2-3 minutes per side until browned
- Transfer to slow cooker, add broth
- Cook on low 8-10 hours or high 3-4 hours until meat shreds easily

- Shred meat using two forks
- Drizzle with cooking liquid before serving
- Serve in tacos with preferred toppings
